Le domaine
“Akhmeta Wine House", a member of Natural Wine Association Georgia, was established in the year 2014. We think that it's important to maximize the protection of the vineyard, grape, and wine ecosystem, biodiversity, natural biological cycles, and biological processes. Based on what’s mentioned above, we are fixed on organic farming and natural wine production. Nowadays we are beneficiary of CAUCASCERT, the only one Georgian company, which offers its customers certification of organic products. Their certificate is legally recognized in Georgia, European Union, and Switzerland. CAUCASCERT Ltd has been accredited according to ISO-17065 by the German accreditation body DAkkS. It has been included in the list of third-country equivalent organic certification agencies (please, refer to EC regulation 1330/2016). Since the year 2019, our vineyards and from the year 2020 our Wines are Bio certified. (http://caucascert.ge/en/operators/operators-register).
Les vignes
More than 70% of the wine is produced in Kakheti, making it Georgia’s primary winemaking region. Although approximately 80 different grape varieties are recorded in Kakheti, perhaps the most important are Rkatsiteli, Mtsvane, and Saperavi.
Akhmeta is distinguished by a remarkable microclimate ensuring perfect grape ripening conditions; the micro-zone is located at the junction of 3 rivers -Ilto, Alazani, and Orvili. Our vineyards are set from 500-550 m altitude from the sea level in this very micro-zone. Soil - carbonate rocks( limestone's, marls) with volcanogenic rocks (tuffs, tufobreccias, etc.).
Akhmeta was a part of PDO "Kakheti", but now it has been added to the newly created PDO "Akhmeta". The National Wine Agency applied to the National Intellectual Property Center of Georgia with a request to register an Akhmeta geographical indication.
Our vineyards are located at the junction of 3 rivers -Ilto, Alazani, and Orvili.
La vinification
The wine is made with conventional Kakhetian rule in the Qvevri (clay jug) wine-making method involving the fermentation with the use of natural yeast without any additive. The grape is fermented, stored, and aged in Qvevri for 3 months after being in contact with its Chacha (Pomace ) for six months.
Les vins
Khikhvi is a local less-spread standardized variety of vine providing high-quality wine. Based on agro-biological characterization – the vine originates from the local area of the Akhmeta district.
The wine is made from 100% of the Khikhvi rare vine variety of hand-picked grape, grown in the Bio-certified vineyard at the terroir of Alaverdi Monastery in Akhmeta municipality of Kakheti region. The Terroir itself is a part of the two PDO’s, Kakheti and Akhmeta. It is made with conventional Kakhetian rule in Qvevri (clay jug) wine-making, involving the fermentation with the use of natural yeast, and without any additive. The grape is fermented, stored, and aged in Qvevri for 3 months after being in contact with its Chacha (Pomace ) for six months. Estate bottled Natural Amber dry wine is rich with phenol compounds, tannins and is characterized by high antioxidant properties due to the Ancient Georgian traditional Qvevri wine-making method. Skin contact, six-month-macerated, and aged in Qvevri Artisan natural dry wine is bottled unfiltered.
Tasting Note: Khikhvi is a full-bodied, complex wine, characterized by the pleasant aroma of field flowers, white stone fruits, peaches, apricots, and a dry fruit bouquet. Wine is rich with tannins and has a Great texture and rich aftertaste.
Food pairing: The complexity of Khikhvi makes this wine an excellent accompaniment to White meat, seafood, and fish.
Serving Suggestions: The recommended temperature for serving is +12-14°C. To perceive the maximum aromas and taste properties of Khikhvi wine, we recommend opening and decanting the wine 20 minutes before tasting it.
Rkatsiteli takes up the largest scope in Kakheti and provides high-quality products for making European and Kakhetian type wines as well as strong and dessert wines. Rkatsiteli is the native grapevine species of Kakheti. It originates from the domesticated species of the Alazani valley. On the right bank of Alazani, namely in its north-western part, in the Akhmeta zone, it makes bright tea-colored greenish, tender, European-type light, wines.
The wine is made from 100% of the Rkatsiteli vine variety of hand-picked grape, grown in the Bio-certified vineyard at the terroir of Sabero in Akhmeta municipality of Kakheti region. The Terroir itself is a part of the two PDO’s, Kakheti and Akhmeta. It is made with conventional Kakhetian rule in the Qvevri (clay jug) wine-making method involving the fermentation with the use of natural yeast without any additive. The grape is fermented, stored, and aged in Qvevri for 3 months after being in contact with its Chacha (Pomace ) for six months. The wine is characterized by its light straw color, slightly transparent, has pleasant sorted aroma, it is distinguished by its varietal specific aroma of dried fig, toasted walnut, and field flowers, the taste is harmonious, full-bodied, and joyful. The wine is rich in phenol compounds and tannins.
It is characterized by high antioxidant properties due to the specific Georgian technology of Qvevri making. Origination of small noble sediment is possible.
Tasting Note: Nose is intense, with aromas of white fruits and fine herbaceous flavors, Mouth is complex and mineral, finishing on herby aromas and fresh tannins
Food pairing: The wine goes perfectly with Western cuisine especially with seafood, duck, and various salads.
